This year Topos Mondial will be attending the International Baking Industry Expositon (IBIE) in Las Vegas, Nevada on October 6-9. The Heavy Duty Roller Bar Horizontal Overtilt Mixer is offered in sizes 8, 10, 12, 14, and 16 with weight capabilities from 800 lbs to 1,600 lbs. It is 100% stainless steel with no gearbox or oil to maintain. Combine that with a fully jacketed bowl and reinforcements, this horizontal mixer was made to live a long life. Cleaning is a breeze on the inside and out with the superior sanitary design. The bowl shape provides the most efficient and fast mixing of yeast raised dough. The Topos Open Frame 3-Roller Bar Horizontal Bakery Mixer comes in sizes 4, 6, and 8 with dough mixing capacities from 400 lbs to 800 lbs. The open frame sanitary design makes cleaning and maintenance on the mixer easy. The frames can either be fabricated from heavy duty mild steel and coated in "Steel-It" stainless steel coating, or they can be made in all stainless steel construction. The mixing bowl was designed with the proven Topos shape with one adjustable roller bar and the adjustable stretcher bar position. The bowl can also be jacketed and offers easily cleanable main shaft seals. 



Topos 300 KG Double Spiral Bakery Mixer


The Topos 300 KG Double Spiral Bakery Mixer is heavy duty and built for demanding production needs. The reinforced, double spiral mixing agitators with dual "stripper" bars offer faster and more thorough dough mixing less time than a single spiral agitator bakery mixer. The entire dough mixing zone is constructed in heavy duty stainless steel. The spiral mixer bowl bonnet allows for the connection to both dry and liquid bulk ingredient feeds. The mixer is "cleaning friendly" on six leveling legs to allow for cleaning underneath as well as easy access for quick sanitation. The agitators are driven via a heavy duty, high efficiency, two-speed drive motor connected to Kevlar reinforced timing belts and over-sized bearing support assemblies. This double spiral agitator bakery mixer can handle both soft and firm dough mixing tasks with very good efficiency. 

Topos Dough Chunker and Elevator


The Topos Dough Chunker and Elevators are offered in weight capacities starting at 1,000 lbs to 2,500 lbs. They are also available in 1,000 to  3,000 lb hopper capacities and able to chunk up to 20,000 lbs per hour. The chunker works in in conjunction with a twin belted elevator. The 29" to 59" long "Triad" dough chunking blades chunk the dough piece dwn onto the horizontal dough belt and into the twin belted dough elevator. Features include non-stick coated chunker blades, all stainless steel sanitary construction, quick release belts for ease of cleaning and PLC controls as needed. 


Topos Over Head Dough Chunkers


The variety of Over Head Dough Chunkers offered at Topos are for portioning the dough into a divider, a dough extruder, or a primary dough feeder. The hopper size and support structure can be customized to meet any plant layout and production needs. The chunker utilizes a pair of the proven triad type chunking blades, which are Teflon coated as standard. The hoppers can be Teflon coated to suit as needed. The chunking hoppers can be made either to be stationary or mobile on top of the supporting stand in order to give access to the divider or the extruder under it. The systems are built in all stainless steel and offer advanced programmable controls as needed.

The Fixed Bowl Spiral Dough Mixers from Topos are heavy duty and built with the latest technology for a variety of dough types from soft to firm. They save energy and mixing time by kneading faster without heating up the dough. The mixing bowl, spiral agitator, and stripper bar are all solid stainless steel. The two-speed main agitator drive motor has an extra support bar design for stiff dough mixing. The mixing bowl is supported with two roller wheels so as to eliminate bowl flexing while mixing, and it can rotate in both directions for ease of removing the dough from the bowl.. Used Bakery Equipment: Double Sigma Mixers

Double sigma mixers are a form of horizontal mixers and are used to work with pastes and powders. Typically these bakery mixers will be equipped with an arm to help with temperature control while cooking and for cooling later. The product will be placed in the top of the mixer where the mixer body will rotate to help with dumping and product removal.

New Planetary Mixer


This planetary mixer is the Topos T-750, 370 qt Removable Bowl Double Planetary Vertical Mixer (RBDPVM). It is currently the only new planetary bakery mixer in stock. This is the ideal mixer for all types of icing, glaze, fillings, and batter. A bowl scraper and dual-locking removable implements are integrated into the bowl to allow for maximum mixing versatility. 

The mixer can run at variable speeds thanks to the high-efficiency main drive motor, which also has a frequency-inverter and an auxillary fan. The mixer can also be controlled by an operator that can be preprogrammed with recipes. However, if the owner would like to use it manually, they will have ease with the Allen Bradley PLC with Panelview touch-screen panel.

Cupcakes from Bakeries Across the Nation

We love cupcakes, and there is a good chance that you probably do, too. What would a bakery be without a selection of cupcakes to choose from? Here are a few cupcakes we have put together from bakeries spread out across the country. We chose these based on their design creativity, but hopefully, they taste just as good as they look.

1. Unicorn Poop


This chocolate cake is topped with a tinted Swiss gluten-free, buttercream frosting. It was made by Cupcake Queen from Santa Barbara, California. Even with a name like this one, we would still eat it. Would you? More interesting and fun designs from this baker can be seen at Flickr.

2. Owl Cupcakes



The popular cupcake blog Cupcakes Take the Cake recently posted this cupcake design from Classy Girl Cupcakes in Milwaukee, Wisconsin. The design is refreshingly made with buttercream and not fondant, which makes us love it more just for the taste. Other flavors to choose from are peanut butter cookie, peanut butter monkey, and chocolate covered coconut. Their Facebook pages shows other animal cupcake designs such as elephants and lions.

3. Tiramisu Cake


This cupcake does not actually come from a bakery but is a recipe from food blog alimentageuse. It just looked too good to pass up, and anyone that has had tiramisu knows exactly how moist and fluffy it is. Put that into a cupcake, and you have the perfect dessert. 

4. Mocha Latte


Anyone who watches Cupcake Wars has probably heard of Crave-Bake Shop from Lake Oswego in Oregon. The gluten-free bakery has been doing great on the latest season of the show. The above cupcake is one that is served in their shop daily. It is a chocolate espresso cake topped with espresso buttercream.

5. PB&J Cupcake



Magnolia Bakery in New York City has plenty of good looking cupcakes to choose from, but we thought this one was too unique not to add to this list. A peanut butter cake filled with grape jelly and topped with peanut butter buttercream sounds delicious. It is not the best looking when compared to some of their other recipes, but taste buds win over eye sight this time.

3 Simple Recipes to Make in a Bakery

Every bakery has its specialties that they offer better than everyone else. This is the epitome of having a successful bakery; however, it is also a good idea to have simple items that are quick and easy to make every morning to offer as extras to customers. These items should not take a great deal of your time, but will give the guests in your bakery other options.


Amaretti Cookies


Customers who love the smell and taste of almonds will have to buy a few of these every time they are in your bakery. They are airy, delicate little cookies that take about four minutes to make  and 24 to 30 minutes to bake for every batch of thirty.

  • Ingredients
    • 2 1/2 cusp of almond flour or 3 cups of blanched slivered almonds finely ground up
    • 1 1/4 cup of superfine baker's sugar
    • 3 egg whites
    • 1/2 teaspoon of vanilla extract
    • 1 teaspoon of almond extract
    • Extra sugar for dusting
  • Baking
    • Preheat oven to 300 F and line baking sheets with parchment paper
    • In a mixer mill together the almond flour and sugar. Add the vanilla and almond extract and pulse for a few seconds. Then add the eggs, one at a time, and continue to process until the dough is smooth.
    • Place teaspoons of the dough on the parchment paper and dust with sugar. Bake for 24-30 minutes or until golden brown. 

Oatmeal Banana Muffins


Who doesn't love a great muffin on their way to work. This easy recipe combines bananas, cinnamon, oats, and brown sugar to get your morning off to a great start.
  • Ingredients
    • 1 medium egg
    • 5 tbsps. vegetable oil
    • 1 cup pancake and baking mix
    • 2 cups quick oats
    • 1 tsp cinnamon
    • 3 medium bananas 
    • 1/3 cup brown sugar
  • Baking
    • Mix together egg and vegetable oil.
    • Stir in brown sugar and cinnamon.
    • Mash bananas then add to mix.
    • Stir in quick oats, pancake, and baking mix.
    • Spoon into greased muffin pans and bake at 350 F for 18 minutes.

Miniature Cheesecakes


Smaller is actually great when it comes to dessert. Sometimes you just need a little extra to top of a great meal, and these mini cheesecakes do the trick. 
  • Ingredients
    • 24 Vanilla Wafer Cookies
    • 3 (8 oz) cream cheese packages, softened
    • 1 cup white sugar
    • 3 eggs
    • 1 tsp. vanilla extract
    • 1/4 tsp. ground nutmeg
  • Baking
    • Preheat oven to 325 F (165 C)
    • Line 24 baking cups with liners.
    • Place 1 wafer in each cup.
    • In a large mixing bowl, beat cream cheese and sugar until smooth.
    • Beat in the eggs one at a time.
    • Stir in the nutmeg and vanilla.
    • Pour mixture evenly into cups, filling 2/3 full.
    • Bake for 20 minutes or until set. 
    • Cool completely, and then if you like add cherry or strawberry topping.

1. Bakery Ovens

The oven is by far one of the most important investments you can make in your bakery. There are very few types of bakeries that can get by without a bakery oven to bring all of their goodies to life. The Different Types of Bakery Mixers


Many professional bakers will attest that the mixing process is the most important step when it comes to producing quality dough to use in their bakery. Each type of food found in a bakery more than likely requires a different type of mixing equipment. For the most part deciding on a bakery mixer depends on the level of business you would like to produce.

Vertical or Planetary Mixers

Planetary bakery mixers also known as vertical mixers get their name from the orbital motion the dough agitator makes, which are circular orbits along the inside wall. The mixing bowl used stays in place while this happens. Planetary mixers are great to have for businesses that need to produce smaller batches at a time. Otherwise planetary mixers are very versatile.

  • Pros
    • Planetary mixers use a broad range of attachments, which make them very versatile.
    • The attachments turn on an offset shaft while the shaft rotates around the bowl.
    • Planetary mixers are capable of mixing, whipping, blending, and stirring various types of dough mixtures.
    • These mixers will normally come with a wire whisk, stainless steel bowl, dough hook, and beater blade.

  • Cons
    • Planetary mixers are not able to mix as much dough at one time as other mixers.
    • They tend to be slower than other bakery mixers.
    • Since they mix smaller batches of dough, planetary mixers must use downsized bowls and agitators.

Horizontal Mixers

Horizontal mixers typically contain a bowl that moves around around beaters. The beaters are driven horizontally within the bowl on one or two shafts. How the dough is cut depends on the shape and speed of the blades. When two shafts are used the bowl makes a 'W' shape, and the shafts rotate in opposite directions. These horizontal mixers are commonly known as 'Z' blades.

  • Pros
    • Very powerful mixers, therefor, able to produce tough dough more rapidly.
    • Good and accurate control of the temperature of the mixing bowl from a jacket with constantly circulating water or refrigerant.
    • Ingredients can be added through the roof of the horizontal mixer while the beaters are moving.

  • Cons
    • The beaters tend to throw materials up to the roof of the mixer.
    • The horizontal mixer's lid totally encloses it so the progress of the mix can not be totally observed.
    • The beater shape allows for blending, dispersion, and kneading, and this could lead to each action being less than ideal.
    • As the size of horizontal mixers increases, kneading efficiency tends to decline relative to heat build up due to friction.

Spiral Mixers

The spiral-shaped dough agitator give spiral mixers their name. Unlike the planetary mixing bowl that remains stationary, a spiral mixing bowl moves while the agitator remains in place. Spiral mixers are often the mixer of choice for bakeries. Spiral mixers are often referred to as “one-bagger” or “three-bagger.” This represents the amount of 100-pound bags of flour or dough they can hold.

  • Pros
    • The sturdy dough agitator found in spiral mixers is typically more effective than traditional beaters and even dough hooks when mixing heavy, stiff dough.
    • More dough can be mixed at once in a spiral mixer.
    • There is less resistance on the spirals, and this help to control the temperature of the dough and will ensure proper rising and easier kneading.
    • There is no need to use downsized bowls and agitators to mix small batches.

  • Cons
    • Spiral mixers are only suitable for mixing dough and not mixing or whipping.

What Bakery Equipment Is Needed to Run a Donut Shop


There are many areas that you will need to consult on if you have dreams of running your very own donut shop. However, if you do not have the proper bakery equipment, it will be rather difficult to have a successful shop. It is important to get the correct equipment to ensure your donuts come out not only looking great but as efficiently as possible.

Mixers

Any type of bakery will require an industrial sized bakery mixer. A start up company should be all right with a 40 quart mixer. Larger production requirements might want to use a a mixer that will hold 140 quarts or more. Horizontal mixers are usually the mixer of choice for a larger business.

Fryers

A fryer is the key bakery equipment to running a donut shop – not an oven. A donut fryer can be either gas or electric and should be able to make between 80 dozen to 150 dozen donuts per hour.

Proofers

A donut proofer is needed to make yeast-raised donuts. This will allow the dough to set on racks at room temperature and be able to rise. A good idea is to have a mobile proofer that can hold multiple sheet pans at the same time and be transported to different areas of the donut shop. It would definitely be a good idea to look into proofers made specifically for donuts.

Icers, Glazers, and Sugar Coater

This bakery equipment can either be several pieces or combined into one. An icer station is definitely needed if you own a donut shop. What kind of donut does not have glaze?
